1 1/2 cup diced jicama
1 small bosc pear, diced
1 medium fuji apple, diced
1 valencia orange, peeled and chopped
1 1/2 cup diced celery
2/3 cup walnuts, chopped
1/3 cup safflower mayonnaise
1/3 cup heavy cream, or full fat coconut milk
3 tblsp. lemon juice, fresh
1/2 tsp. vanilla extract
2-3 tblsp. Chicory root/FOS sweetener, or xylitol
Peel and cut jicama in 1/2 inch dice. Peel and core the apple and pear and dice. Peel orange and separate into sections and chop into 1/2 inch pieces. Chop walnuts. Place everything in a large bowl. Whisk together the mayonnaise, cream, lemon juice, vanilla extract and sweetener in a small bowl. Add to the salad and toss.
How to get a fruit salad and still be low carb? The jicama and celery are mild enough that all you really taste is the fruit.
